    Abstract: 大蒜(Garlic, Allium sativum L.)數千年來即被廣泛栽植於中東及遠東地區,作為日常蔬菜與香辛調味料,此外,大蒜保健功效亦受到人們高度重視。近年來,已有相當多證據指出大蒜具有多種生理活性可應用於預防保健上,比如預防心血管疾病、預防癌症、調節血糖、調節免疫機能、調節抗氧化活性與抗菌等,其中在預防癌症上一般認為與大蒜調節藥物解毒能力有關。已知大蒜生理活性與大蒜所含有的有機硫成分(Organic sulforganic compounds)有密切關係,而且這些硫成分種類與數量受到大蒜加工方法與條件的影響,一般市售大蒜精即是利用水蒸汽蒸餾法萃取自新鮮大蒜的揮發性含硫成分,又稱為大蒜精油,二烯丙基硫化物(Diallyl sulfide, DAS)、二烯丙基二硫化物(Diallyl disulfide, DADS)、二烯丙基三硫化物(Diallyl trisulfide, DATS)即是大蒜精油中三種主要成分。大蒜生理活性除與這些成分種類及含量有關外,目前也有證據顯示大蒜硫成分預防腫瘤或調控抗氧化活性與硫原子數目或烯丙基數目有關。然而探討大蒜精油及其硫成分的免疫調節效應卻不多見,因此本實驗首先利用動物飼養模式探討不等劑量大蒜精油、DAS、DADS或DATS對頸淋巴結淋巴細胞增生率之影響;並利用Macrophage Raw 264.7細胞,在0.1μg/ml LPS誘發下探討不同濃度大蒜精油、DAS、DADS或DATS對Inducible nitric oxide synthase (iNOS)蛋白質及mRNA表現之影響。
